when life gives you lemons...make juice

I have a new toy.  A Mellaware juice extractor.  It has been a bit of a novelty this week, making different mixes every morning.   It is quite a process and I have been getting up early to get the juice ready for the day.  It is a hectically powerful machine which sounds like an aeroplane taking off and landing when you switch it on and off.  The grinder part is pretty sharp and my fingers are a mess (no, not caught in the machine, just from cleaning it).

Any ideas of what to do with the bucket loads of pulp that remains?

I tried making fritters the other evening but they did not bind very well and tasted a bit "muk" (as Matthew would say).  Most of it has ended up in my compost heap but there must be a use for it.  Unlike the pulp from oranges the carrot pulp does not have much flavour.  I believe it is great to add to your dog food.  Anybody want me to keep it for their dog?  I don't think Dalene's long little low-on-the-ground rodents-dogs would go crazy for carrots, beetroot and pineapple pulp.

I have been bringing a jug into office everyday.  The girls have all been enjoying it (except for Gill, who does  not do vegetables) and every morning I give them some to try.  Yesterday I made an exceptionally good mix.  Everyone loved it.  I offered a sip (my last glassful) to Albertina.  "Have a sip Albertina and tell me what is in it?".   She took the glass (as they do) with both hands and a big smile and commented on the bright red colour.  "Mmmm.........nice Jen...........very sweet"  (Another sip) "Very sweet........... very nice Jen".  (Glugg, glugg, glugg). The whole glass gone.  She puts the glass down and continues vacuuming our office.  Gill has now had to leave the room because the tears are rolling down her face and I run to the bathroom because the tears are running down my legs.  

I did not bring any to the office today.  Heading home now to experiment with my juicer and vodka.  Pineapple, lime, beetroot, mint and vodka.  I have had enough carrots to last awhile.
